Preparation Time: 20 min
In a medium bowl, mash the avocados with the lime juice.
Add 3 tablespoons of chopped chilies, along with the spring onion, cilantro and mayonnaise.
Mix well, season with salt and pepper.
On a cutting board: Place a piece of cheese in a wonton wrapper or spring roll, about 6 mm from the top.
Fold in each side of the wrap, then roll up.
Repeat with remaining cheese and wonton or spring rolls.
In a medium deep skillet, heat oil over medium heat until it reaches 180° C (gas mark 4).
Adjust the heat to maintain the temperature.
Fry the cheese sticks until golden brown, about 5 minutes.
Drain well on paper towels.
Serve with guacamole garnished with the remaining chopped chilies.
