In a blender, mix the avocado, olive oil, lemon juice, salt and pepper to form a smooth dressing. Set aside.
In a small bowl, mix the cream cheese and chives.
Place a slice of turkey ham on a flat surface and spread some of the cream cheese mixture, covering the entire surface.
Roll up, cut into 2-inch pieces and set aside. Repeat with the cream cheese mixture and the remaining turkey ham.
In a large bowl, add the mixed vegetables and cover with the sweet peppers, cherry tomatoes and ham rolls.
