PREPARATION

In a large bowl, combine the avocados, tomatoes, cheese, and bacon. Season to taste with salt and pepper. Add the olive oil and gently toss before serving.

INGREDIENTS

  • 2 avocados, pitted and peeled, cut into
  • 2cm cubes
  • 2 medium tomatoes, peeled and seeded, cut into 2cm cubes
  • 500g fresh cheese (fresh mozzarella, or other fresh soft cheese), cut into 2cm cubes
  • 4 slices crispy bacon, crumbled
  • Salt and pepper
  • 45ml olive oil
