PREPARATION

To make the dressing, in a small bowl, whisk together the olive oil, balsamic vinegar, lime juice, honey, and soy sauce. Season with salt and pepper. Set aside.

In a small pan, heat the butter and sugar. When the mixture begins to darken and caramelise, add the apple and cook for 4 minutes. Set aside.

In a large bowl, combine the greens, avocado, smoked salmon, mushrooms, almonds, blue cheese, caramelised apples, and, if desired, rose petals. Toss lightly with the dressing and serve.

  • Dressing
  • 125ml olive oil
  • 60ml balsamic vinegar
  • 45ml lime juice
  • 30ml honey
  • 30ml soy sauce
  • Salt and pepper
  • Salad
  • 15g unsalted butter
  • 25g sugar
  • 1 medium apple, peeled and coarsely chopped
  • 150g mixed greens
  • 1 avocado, pitted, peeled, and sliced
  • 200g sliced smoked salmon
  • 200g mushrooms, cleaned and sliced
  • 50g sliced and toasted almonds
  • 30g crumbled blue cheese
  • 1 large handful red rose petals (optional)
